With simple swaps such as using whole grain pasta, lean boneless skinless chicken breasts and other high quality ingredients, I was able to make my Bruschetta Chicken Pasta healthier without sacrificing the taste!

What I love about the Publix Viva Italia event is that it features high quality products which helped me to make this Italian dish more healthier and flavorful!
At Hunt’s, they are all about tomatoes. That’s why they can each tomato for their diced, stewed, and whole varieties within hours of picking it from the field, and FlashSteam with only water—not lye. That’s very important…the less chemicals that we can introduce into our diets, the better…in my humble opinion.

I just love the added flavor that the Tuscan Chicken Broth gave to my Bruschetta Chicken Pasta. And Kraft Parmesan Cheese is always a delicious favorite!
My inspiration for my Bruschetta Chicken Pasta was this recipe for Hunt’s® Bruschetta Chicken Skillet. After checking our their skillet recipe, I knew that I wanted to take it to a healthy pasta recipe that incorporated some of the other product featured by Publix’s Viva Italia promotion.
Here is your recipe for Bruschetta Chicken Pasta:
- 1 box (13.25 oz.) whole grain or whole wheat pasta, cooked al-dente according to package instructions.
- 1 sweet, yellow onion, finely chopped
- 3-4 cloves, garlic, chopped or pressed
- 2 lbs. boneless, skinless chicken breasts, chopped into bite-sized pieces.
- 2 cans (14.5 oz) Hunt's Fire Roasted Tomatoes
- ¼ cup Hunt's tomato sauce
- 1 tbsp. balsamic vinegar
- ¼ cup fresh basil, chopped
- ½ cup Progresso Tuscan Chicken Broth
- 1 tbsp.corn starch
- ⅓ cup Kraft Parmesan Cheese
- Crushed red pepper (optional), sea salt and fresh ground pepper, to taste.
- Cook pasta "al-dente" according to package instructions, reserving ½ cup of the starching cooking water. Drain pasta and keep warm.
- Heat olive oil in a large skillet over medium-high heat, add onions and garlic. Saute until onion are soft and translucent, approximately 3-4 minutes.
- Add chicken pieces. Brown chicken on all sides, approximately 4-5 minutes.
- Add tomatoes, tomato sauce, balsamic vinegar and fresh basil to the pan. Stir to combine.
- In a separate small bowl combine reserved starchy cooking water, chicken broth and corn starch.
- Add to chicken mixture. Stir to combine and let the sauce thicken. Approximately 3-4 minutes.
- Combine sauce, pasta, parmesan cheese, crushed red pepper (if using), salt and pepper.
- Serve with a simple green salad and crusty whole-wheat bread.

This makes me miss Publix. I lived in GA & FL all my life and moved up to MD 2 years ago. Publix is the best grocery store ever! Hunt’s Signature Recipe: Crispy Breaded Tilapia is really good! But I think your recipe will be my new Hunt’s favorite.
