Mustard Glazed Salmon is a flavorful way to prepare heart-healthy salmon. Dijon mustard, lemon, garlic and fresh herbs make a quick glaze for roast salmon. Use the glaze on broccoli as well and roast add some brown rice and you have a complete meal on the table that you can feel good about and enjoy!!
SPOTLIGHT ON SALMON 🙂 It’s main health benefit is that it is an excellent good fat and source of the all-important Omega-3 fatty acids. Vitamins A, B and D as well as the minerals calcium, iron, phosphorus and selenium are also found in salmon.
Those omega-3 fatty acids in salmon will help lower your cholesterol, lower your blood pressure and even prevent hardening of your arteries which will lessen your chances of having a heart attack.
In addition, omega-3 fatty acids help your brain work better and improve your memory. In conjunction with Vitamins A and D, amino acids and selenium those acids also protect your nervous system from the deteriorating effects of aging.

- 2 garlic cloves, minced or finely chopped
- ¾ teaspoon finely chopped fresh rosemary leaves
- ¾ teaspoon finely chopped fresh thyme leaves
- ¾ teaspoon finely chopped fresh parsley leaves
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh-squeezed lemon juice
- Nonstick olive oil cooking spray
- 4 (6 ounce) salmon fillets
- Salt and freshly ground black pepper
- Preheat the oven to 400 degrees. Line a heavy rimmed baking sheet with foil. Spray the foil with nonstick spray.
- Combine the garlic, herbs, olive oil, mustard and lemon juice in a small bowl.
- Arrange the salmon fillets on the baking sheet.
- Spoon ¼ of the mustard mixture on each piece of salmon and place in the oven for approximately 10 minutes.
- Raise heat to broil and broil the fish until the fish is cooked to your desired temperature.
