I knew that would be a big hit and I wanted to share it with y’all. Selfishly though, I wanted to make sure that I documented it so I could add it to the rotation… 😜

Here is your recipe for One Pot Beef Taco Rice Skillet with Corn:
- 1 lb. lean ground beef
- 1 large yellow onion, chopped
- 3 cloves garlic, minced or pressed
- 2 cups instant brown rice
- 1 can (10 oz.) enchilada sauce
- 10 oz. water
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 1 tsp. chipotle chili powder
- 1 tsp. red pepper
- 1 tsp. coriander
- 1 tsp. paprika
- Sea salt and fresh ground pepper, to taste
- 1 bag (10 oz.) frozen corn kernals
- 1 cup Mexican blend shredded cheese
- Fresh chopped cilantro, parsley or oregano for garnish (optional)
- Heat a large skillet over medium-high.
- Add beef to the skillet, stir frequently and cook for 6-8 minutes or until brown
- Add onion and garlic to the skillet and cook for 2-3 minutes or until onion is beginning to soften.
- Add rice and enchilada sauce to the pan and stir.
- Fill empty enchilada sauce can back up with water and pour into skillet and stir.
- Add spices to the skillet and stir well to combine.
- Cover and cook for 10-15 minutes or until most of the liquid is absorbed and rice is tender.
- Stir in corn and cheese and cook for 3-4 minutes to melt cheese and heat corn through.
- Sprinkle with chopped cilantro, parsley or oregano (if using).
