I love to cook for friends and family and have a knack for making recipes healthier…without sacrificing the most important part, THE TASTE! My blog is full of great recipes that are tasty, healthy, easy and full of fresh ingredients. I am also a health and fitness coach, and am passionate about helping others achieve their goals! I believe that it can be easy to be healthier and nothing has to be off-limits.
Speaking of off-limits…when most people think of a healthy recipe, they don’t think of a pasta dish. I personally L-O-V-E pasta and will not be taking it out of my diet. I just find a way to make it healthy and make sure that my portion size isn’t too big (so no, you cannot have the whole bowl) Although…I promise you that you will want to! My Skinny Cajun Chicken Pasta will make your mouth water! It is a bit spicy (but I love spicy foods and you could always dial down the spices if that isn’t your thing), tastes decadent but won’t be keeping you from fitting into your favorite skinny jeans. It is easy enough for a week-day night but also worthy of any special occasion. Maybe you could make it for your Valentine????
To make my Skinny Cajun Chicken Pasta ‘Becky’s Best Bites‘ approved, I take out any heavy cream that you might find in a typical Cajun Chicken Pasta and replace it with super healthy and clean-eating approved greek yogurt and a small amount of reduced fat cream cheese. I also add in a ton of fresh vegetables, fresh herbs and lean protein (boneless, skinless chicken breasts) to make this a dish that you can enjoy without ANY guilt! I also choose to use either a 100% whole grain penne pasta or for those cannot tolerate gluten or just wish to avoid it, a gluten-free penne pasta. The veggies and protein definitely have a much larger proportion to the pasta in this dish.
