Happy Spring, y’all 😛 Now that it is officially spring and it is actually still light out when I get off of work and get home, I am definitely not wanting to spend more time in the kitchen. I would rather be outside enjoying the gorgeous weather!! I can’t wait to get out in a couple of weeks and get my little garden planted so we have fresh herbs and veggies for all of my recipes!! I told myself that I would wait for April just in case we get a late frost. I did cheat a little yesterday and bought a basil plant. I needed basil for a recipe I was making and they had little plants at the grocery store, so I went for it 😉 It is a little plant and I left it in the pot so I can bring it inside if the weather turns cold.

This Slow Cooker Chicken Tikka Masala with Vegetables started out very randomly. I was getting ready for work one morning and I was actually ahead of schedule (I am NOT a morning person) and had a few minutes before I needed to leave. I thought that I would throw something in the slow cooker. I started with basics, onion and garlic, then went with chicken. I saw that we had a bunch of fire roasted tomatoes in the pantry, so I threw those in. I decided to kind of go the “curry” route with the spices. That was it and I headed off to work…

To try to figure out what I was making, I googled “chicken tomato curry” and kept seeing recipes for tikka masala. That was something I hadn’t make before so I wanted to give it a try 🙂 I decided to bump up the nutritional factor by adding chickpeas, garden peas and matchstick carrots. I used greek yogurt to make it creamy and topped with some fresh cilantro!

The result was my Slow Cooker Chicken Tikka Masala with Vegetables! We loved the yummy chicken, tomatoes, chickpeas, garden peas and matchstick carrots all swimming in a luscious creamy curry-like sauce!! The brown rice soaked up the sauce too and really tied it all together 😎

Ingredients
  • 1 large yellow onion, sliced
  • 3-4 cloves of fresh garlic, minced or pressed
  • 1.5 lbs. boneless, skinless chicken breasts
  • 2 (15 oz.) cans fire roasted diced tomatoes
  • 1 tbsp. turmeric
  • 1 tsp. hot curry spice
  • 1 tsp. cumin
  • 1 tsp. cardamom
  • Sea salt and fresh ground pepper, to taste
  • ½ cup reduced-sodium chicken stock
  • 1 (15 oz.) reduced-sodium chickpeas, rinsed and drained
  • 1 cup nonfat greek yogurt
  • 1 cup matchstick carrots
  • 1 cup frozen peas
  • 2 tbsp. fresh cilantro, chopped
Instructions
  1. Place a slow cooker liner or spray the bowl with non-stick cooking spray.
  2. Add onions and garlic to the bottom of the slow cooker bowl.
  3. Add chicken on top of the onion and garlic
  4. Add tomatoes, turmeric, hot curry, cumin, cardamom, salt and pepper.
  5. Add chicken stock. Cover and cook on low for 7-8 hours or high 3-4 hours.
  6. Add chickpeas, greek yogurt, carrots and peas and cook for 10 minutes more.
  7. Sprinkle with cilantro.
  8. Serve over brown rice.

    I love my slow cooker. (Actually, all five of them.) I use them year round, they’re great at winter comfort food and for not heating the house in the summer.

    This looks so good! I’m vegetarian so I would probably sub out the chicken with some tofu but the seasonings and the dish as a whole sound right up my alley. Thank you for posting!

    That looks so delicious! I’ve been looking for recipes that incorporate chickpeas. This loosk good and I love that you can make it in the slow cooker! I’m all about using that as much as I can!

    You mentioned adding greek yogurt in your blog but how much and when is not noted in the recipe/ingredients. ?????

      So sorry for the omission!! Thank you for bringing it to my attention. I will update the recipe accordingly. You add 1 cup Greek yogurt during the last few minutes of cooking along with the carrots and peas.

    you don’t mention shredding the chicken, but it looks like it is. Do you have to add the yogurt.

      The chicken literally falls apart after cooking it that long, but you could shred it if desired. You add 1 cup Greek yogurt during the last few minutes of cooking along with the carrots and peas.
