We have about two weeks before we head to the beach for our annual family vacation and I cannot wait! We are doing the beach instead of the lake this year and I think it will be a nice change for us. This Slow Cooker Creamy Cilantro Lime Chicken is a recipe that you are going to want to keep in your back pocket as we roll into back to school season! Yep, I just brought that one up! We are already into July and kids around here go back in early August so it is time to start thinking about it! I know I can’t be the only one that is already seeing back to school ads popping up everywhere?!?! In fact, just this morning I was walking with my sister that is an elementary school teacher and she was talking about getting back in her classroom next week to start putting it together for the new school year!!
Here is your recipe for Slow Cooker Creamy Cilantro Lime Chicken:
- 1 large, sweet, yellow onion; sliced
- 3-4 cloves garlic, minced or pressed
- 2 lbs. boneless, skinless chicken breasts
- 1 (4 oz.) can fire-roasted diced green chilis
- 1 tbsp. ground cumin
- 1 tsp. oregano
- 1 tsp. ground coriander
- Sea salt and fresh ground pepper, to taste
- Zest and juice of one lime
- 1 cup reduced-sodium chicken broth
- 1 small container (5 oz.) nonfat greek yogurt
- 2 tbsp. cilantro (more or less depending on preference), chopped; plus more for garnish
- Place a slow cooker liner in the bowl of a slow cooker or spray liberally with nonstick cooking spray.
- Add sliced onions and garlic to the bottom of the slow cooker bowl.
- Place chicken on top and season with spices.
- Add lime zest and juice and then pour chicken broth down over everything.
- Cover and cook on low for 7-8 hours or high for 3-4 hours.
- Once chicken is cooked through and tender, stir and break up chicken.
- Add greek yogurt and cilantro. Stir to combine.
- Serve over brown rice, quinoa or alone for a low carb meal.
- Garnish with chopped cilantro.
- Enjoy!!
