Slow-Cooker-Italian-Chicken

This is one of those recipes that was a “throw together what I had in the house together” in the slow cooker as I am running out the door to work and hope is at least edible. We had an abundance of fresh tomatoes and green peppers that really needed to be used. Onion, garlic, boneless skinless chicken breast and the other seasoning are staples in my household…so Slow Cooker Italian Chicken was born. It actually received rave reviews and I was told to keep it on the “must do again” list 🙂 Winner, winner, chicken dinner 🙂

Although I used fresh tomatoes that had been given to us by a local farmer, canned, bottled tomatoes and tomato products are available year round. “Processed Tomatoes” are minimally processed. The tomatoes are picked at peak ripeness, then cooked and canned or bottled, much like our grandmothers used to do. Learn more about the many health benefits of tomatoes.  I always keep canned, diced tomatoes in my pantry just in case I don’t have fresh. Fresh is best but sometimes you just gotta do whatcha gotta do to make sure that those veggies hit the table 🙂

Ingredients
  • 1 cup chopped onion
  • 1 lb boneless, skinless chicken breast (frozen is fine)
  • 1 tablespoon minced or pressed garlic
  • 6 medium tomatoes, chopped (or 2-14.5 ounce cans diced tomatoes)
  • 2 green bell peppers, seeded and chopped
  • 2 tablespoon tomato paste
  • ½ cup sodium-free or reduced-sodium chicken stock, divided
  • 2 teaspoons italian seasoning
  • 1 teaspoon sea salt
  • 1 teaspoon fresh cracked black pepper
Instructions
  1. Spray a slow cooker with non-stick cooking spray or insert a slow cooker liner.
  2. Add onion to the bottom of the slow cooker and place chicken on top of the onion.
  3. Add garlic, tomatoes, bell peppers, tomato paste, ½ cup chicken stock and seasonings to slow cooker.
  4. Cover and cook on low for 7-8 hours or high for 3-4.
  5. Serve over wild rice, brown rice, quinoa or enjoy alone for a low-carb meal.
