Slow Cooker Italian Chicken and Potatoes with Arrabbiata Sauce is an easy, healthy and tasty dinner that can be made with ingredients that are usually on-hand. Take 10 minutes before work in the morning to throw the ingredients in your slow cooker and come home to a wonderful Italian meal that the whole family can enjoy!
Will this winter ever end???? I know I really shouldn’t be complaining since I do live in the south and we aren’t having to deal with all the snow and ice that a lot of folks are, but still it has been one cold, dreary and rainy winter for us here in the south!! I NEED some sunshine and warmth folks, how about you?
Last Saturdayย it was one of those cold, dreary and rainy days that we have been experiencing a lot of this winter and I just couldn’t bring myself to leave the house!! ย I wasn’t changing out of my comfy yoga pants, favorite sweatshirt and fuzzy socks…I put my foot down!!! We also live on a dirt road so when it rains those become a mess too!! You slip and slide all over the road and splatter red Georgia clay up the side of your car. Let me tell that is just a blast to deal with and not to mention that I have a small car that sits pretty low to the ground, so I sometimes get bogged down in the deep ruts that you are supposed to drive in to keep from sliding into the ditch!! Let me tell you how much fun I have been having this winter with that!! But I did have fun coming up with a dinner made without a trip to the store!
Slow Cooker Italian Chicken and Potatoes with Arrabbiata Sauce was born!
So anyways…back to last Saturday, as I mentioned I wasn’t leaving the house but I still had to figure something out for dinner. I looked through the refrigerator, freezer and pantry and voila! All of my ingredients are pictured below with the exception of the chicken broth. I forgot it in the picture…sorry ๐
I immediately thought Italian and making a spicy sauce out of the fire-roasted diced tomatoes, crushed red pepper (since we are huge spicy fans! But if your family isn’t, just leave it out) and the fresh spicy oregano that I have in my container garden on the deck. Somehow it has survived this year even with the cold ๐
Dump all your ingredients, except the potatoes, in the slow cooker ๐
Add a piece of aluminum foil down over the sauce and then add the quartered tomatoes and a splash of chicken stock. ย I learned this trick a few years ago. I can’t remember where but it keeps your potatoes from breaking down in the slow cooker, falling apart and just becoming mush! I like my potatoes to be a little firmer and not break down in the sauce.
After either 4 hours on high or 8 hours on low, dinner is ready!
Here is your recipe for Slow Cooker Italian Chicken and Potatoes with Arrabbiata Sauce:
- 1 large, sweet onion, chopped
- 3-4 fresh garlic cloves, minced or pressed
- 8 oz. (1/2 of a small bag) of baby carrots
- 1-1½ lbs. boneless, skinless chicken breasts
- 2 cans (14.5 oz. each) of fire-roasted, diced tomatoes
- 2 tbsp. your favorite seasoning blend (I used Montreal Steak Seasoning), divided
- 1 tbsp. fresh spicy oregano, chopped
- 2 tsp. dried marjoram or italian seasoning
- 2 tsp. crushed red pepper flake (More or less depending on how spicy you like it. I used about 1 tbsp.)
- ⅓ cup reduced-sodium chicken broth, divided
- 1-1½ lbs. baby red potatoes, quartered
- Place a slow cooker liner in the bowl of the slow cooker, or spray with non-stick cooking spray.
- Add all ingredients, in the order listed, to the slow cooker, except the potatoes.
- Place a piece of aluminum foil over the sauce and chicken, pressing down slightly to make a bowl shape. Add the potatoes and a splash of chicken stock. Season the potatoes with 1 tbsp. of seasoning blend.
- Cover and cook on high for about 4 hours or on low for 8 hours.
- Enjoy ๐
