Slow Cooker Salsa Chicken and Rice might possibly be the easiest meal ever! Boring, weeknight chicken becomes the most popular kid at the table when jazzed up with tangy salsa & spices. Throw some brown rice in your rice cooker and set it to be done when the slow cooker is and dinner is D-O-N-E!!!

Those recipes that we can throw together in 5 minutes because it is one of those “crazy” days and you can’ t really even think about what’s for dinner. The ingredients are all items that you would have on-hand, as long as you have made my Homemade Roasted Tomato Salsa and canned it for later. You could certainly usae store-bought salsa, but let’s face it…it just isn’t as good 😉
My inspiration for my Slow Cooker Salsa Chicken and Rice came from this recipe by My Mommy Style for 5 Ingredient Slow Cooker Salsa Chicken. Of course I started with onion and garlic, because what good recipe doesn’t? Added the chicken, my Homemade Roasted Tomato Salsa, a little chicken stock so nothing dries out and a few spices. That’s it!!! Set your favorite slow cooker on either low for 8 hours or high for 4 hours. Then set your rice to be ready at the same time by using a programmable rice cooker.
Here is the recipe for Slow Cooker Salsa Chicken and Rice:
- 1 large sweet yellow onion, chopped
- 3-4 garlic cloves, minced or pressed
- 1 lb. boneless, skinless chicken breasts
- 1 cup homemade salsa or other salsa of your choice
- 1 tbsp. cumin
- 1 tbsp. chili powder
- 1 tsp. chipotle chili powder (or more depending on how spicy you like it)
- 1 tsp. cracked red pepper (or more depending on how spicy you like it)
- Sea salt and fresh cracked pepper to taste.
- ¼ cup reduced-sodium chicken stock
- 1 cup long grain brown rice
- 2 cups water
- Place a slow cooker liner in the bowl of the slow cooker or spray with non-stick cooking spray.
- Add onions, garlic, chicken, salsa, cumin, chipotle chili powder, cracked red pepper, salt and pepper.
- Add stock over top over the mixture and stir to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Add rice and water to your programmable rice cooker. Set timer for 7 hours if cooking the chicken on low or 3 hours if cooking the chicken on high. This will have the rice and chicken ready at about the same time.
- Fluff with a fork.
- Serve chicken over rice.
