I also love that they are cheap and cheerful! What I don’t love it that you typically have to heat up the oven and roast them for an hour! It is already HOT ENOUGH here in Georgia this summer, so the last thing that I want to do is to heat up the house anymore by having the oven on for an hour or more. I have tried microwaving them and while that is OK, you just don’t get the same flavor as oven roasting. I decided to give another method a try…slow cooker sweet potatoes!
I have to say that slow cooker sweet potatoes is AMAZING!! The sweet potatoes come out perfectly and it couldn’t be simpler! I can’t really call this a recipe…but here is the method that I used and will continue to use throughout the summer and probably throughout the year! Yes, it is that good 🙂
These slow cooker sweet potatoes start my thoroughly washing your sweet potatoes! If you are planning to eat the skin of the sweet potatoes you will probably want to scrub them too. Five medium sweet potatoes fit nicely in my slow cooker. Here is the key: DON’T DRY THE SWEET POTATOES! You will want to put them into the slow cooker still wet. This will create some steam that really helps in the cooking process. Cover and cook on high for 3-4 hours or until the sweet potatoes are tender.
THAT’S IT! Simple right? You will have perfectly cooked slow cooker sweet potatoes to enjoy 🙂 I love to enjoy them simply with a drizzle of olive oil or pat of butter, salt, pepper and a little cayenne pepper or crushed red pepper flakes. If I have leftover protein or veggies, then I will sometimes top my slow cooker sweet potatoes with them.
However, this particular batch of slow cooker sweet potatoes had another use. I have been very slowly introducing baby girl to some solid foods. So far, she has tried my applesauce (without the spices), banana puree and avocado. Now I wanted to try sweet potatoes, which in the past I have always cooked the sweet potatoes in the oven. This time, I just took the slow cooker sweet potatoes once cooked and super soft and placed them in the food processor. This step was probably overkill (because they were super soft already), but I wanted to make sure that there no little chunks that could be a choking hazard.
It was a success!! She LOVES sweet potatoes!! Check out this cutie-pie 🙂

- 5 medium sweet potatoes
- Thoroughly wash sweet potatoes, scrubbing the skin if planning to eat it.
- Place wet sweet potatoes in the bowl of a slow cooker.
- Cover and cook on high for 3-4 hours or until tender.
