This recipe for Slow Cooker Thai Curry Pork came together as a lot of my recipes do, from looking in the pantry/refrigerator and thinking, “what can I put together for dinner tonight?” I’m a big fan of using the food that we already have to put something together and not having to run to the store all the time just to put dinner on table. I was craving thai food and all the wonderful flavors that I associate with it…turmeric, hot curry, coriander, fresh ginger and garlic…mmm, ok now I am getting hungry again…

Pretty cool huh? I bet your thinking that you wish you had a tasty, easy meal that featured this “queen of spices…” Well, your wish is my command. Slow Cooker Thai Curry Pork is a wonderful meal that features super lean boneless pork chops, onions, garlic, ginger, carrots, turmeric and curry! And it couldn’t be simpler, just throw everything in your slow cooker in the morning and dinner is D-O-N-E!
- 1 large sweet onion, chopped
- 4 cloves of garlic, minced or pressed
- 1 tbsp. fresh ginger, grated
- 8 ounces baby carrots (whole carrots, peeled and chopped is fine too)
- 4 lean boneless pork chops
- 1 tbsp. turmeric
- 1 tbsp. hot curry (less if you don't like spicy or just use regular curry)
- 2 tsp. cumin
- 2 tsp. cardamom
- 1 tsp. crushed red pepper flake (optional)
- Sea salt and fresh cracked pepper to taste.
- ½ cup reduced-sodium chicken broth
- Spray slow cooker liner with misted extra virgin olive oil or place a slow cooker liner in the base of the slow cooker.
- Add onions, garlic, ginger and carrots to the bottom of the pot.
- Add pork chops, spices and chicken broth.
- Stir, cover and cook for 4 hours on high or 8 hours on low.
- Shred pork and stir. Check and adjust seasoning.
- Serve over brown rice or quinoa and add a steamed green vegetable.

Cook for 4 hours on low, or 8 hours on high??? Can this possibly be a mistake and should be reversed?
