You might be thinking that I am slightly obsessed with tomatoes since you have been seeing them on the blog a lot here lately…There were a just a few posts about tomatoes:
As I mentioned in my post for Homemade Roasted Tomato Salsa, my Dad’s customer brought him A TON of tomatoes and so I had to make sure that none of them went to waste. Well, finally the really green ones turned a beautiful shade of red and I knew they were ready! I had been planning on trying a slow cooker tomato sauce since I saw this post for Crockpot Tomato Sauce from Momables.
Slow Cooker Tomato Sauce with Fresh Herbs couldn’t be easier! Okay….so quick confession…my basil from my little container garden bit the dust during the last cold snap that we had. I ended up having to use dried basil. Just throw all the ingredients in your favorite slow cooker, cover and cook on high for 3-4 hours or until the tomatoes have broken down.
Then use an immersion blender to blend up your sauce. Here is a lesson that I learned…if you are using a slow cooker liner, remove the liner BEFORE starting with the immersion blender…duh?!? I think I should have known this, but I didn’t even think about it. Ooops…
Then either use immediately or do as I did and put into single serving plastic storage containers and freeze until needed. You could also can this recipe if desired.
Here is your recipe for Slow Cooker Tomato Sauce with Fresh Herbs:
- 1 large, sweet yellow onion, sliced
- 4 cloves fresh garlic, pressed or minced
- 3-4 lbs. fresh tomatoes, halved and cored
- 1 tbsp. rosemary, chopped
- 1 tbsp. oregano, chopped
- 1 tbsp. basil, chopped
- sea salt & fresh cracked pepper flakes to taste.
- If you want it spicy, add cracked red pepper to taste.
- Place a slow cooker liner in the bowl of your slow cooker or spray with non-stick cooking spray.
- Add onion and garlic to the bottom of your slow cooker.
- Top with tomatoes, rosemary, oregano, basil, salt, pepper (and red pepper flakes if you are using).
- Cover and cook on high for 3-4 hours or until the tomatoes are broken down.
- Use an immersion blender to blend your sauce.
- Use immediately, freeze or can for later.
