Sneaky Veggie Breakfast Scramble Bites are protein and vegetable packed little portable nibbles that your toddlers and kids will love and parents will enjoy too! Quinoa, eggs, veggies and fresh herbs come together in a hand-held bite that will keep them full until lunch. Start their day off right and sneak in veggies that they won’t even notice! It is easy to make a batch ahead of time and freeze so that even on crazy school and work mornings, you have a filling and healthy breakfast to hand them as they walk out the door or jump in the car.
As I have mentioned, my nephew Z is no longer eating much baby food. He has moved on!! My sister wanted me to see if I could find bite size foods that he could feed himself and that she could send to school (daycare) with him. Of course, she and I both wanted them to be healthy and taste good for our lil man. I did some research on my favorite research tool, Pinterest, and came across this post from Cooking Quinoa: Sneaky Veggie Breakfast Bites. My Sneaky Veggie Breakfast Scramble Bites is similar to the original recipe. I just made a few modifications based on what I had on hand. I also took out the salt from the recipe because Z isn’t supposed to have any added salt. He is still drinking formula, which has sodium in it, so he doesn’t need anymore. On the veggies, you can use whatever you have on hand. The recipe calls for zucchini and cherry tomatoes, but pretty much any vegetable chopped finely would work. Mix it up and be creative! I plan to make these again for Z using different veggies. I’ll report back on how it goes…
Here is the recipe for Sneaky Veggie Breakfast Scramble Bites:
- 6 eggs
- 1 cup cooked quinoa
- ½ cup shredded mozzarella cheese
- ½ cup shredded zucchini (use a box grater)
- 4 oz red grape tomatoes, quartered
- 1 tsp. fresh rosemary, chopped
- 1 tbsp. fresh cilantro, chopped
- ½ tsp. fresh cracked ground pepper
- Pre-heat over to 350 degrees.
- Grease 2 (24 cup) mini-muffin pans with non-stick cooking spray.
- Cook quinoa according to package instructions and let cool.
- Prepare vegetables by grating the zucchini and quartering the grape tomatoes.
- In a large mixing bowl, whisk together eggs.
- Stir in quinoa, cheese, veggies, herbs and pepper and mix until evenly combined.
- Using a spoon, pour mixture into the muffin tins, careful not to overfill (they will expand during cooking a bit).
- Bake for 20 minutes or until eggs are set.
- Remove from oven and let cool a few minutes before removing the bites to a cooling rack.
- If desired, place cooled muffins on a cooking sheet and place in freezer to freeze without them sticking together.
- Once frozen, place bites in a freezer bag or vacuum seal bag and place in the freezer.
- To heat: defrost in the microwave for about 1 minute and then cook on high for 30 seconds or until heated through.

Can cheese be omitted? Or substituted with something else?

Hi Tracy,
I haven’t tried making these without cheese, but I would think that you could use a non-dairy cheese. If you want to eliminate the cheese all together, then you might have to add an extra egg (or egg substitute) to help them bind. Again, I haven’t tried any of these substitutes but just my thoughts. I would guess that you could use a flax egg or another egg replacer. You need a binder. I have not tried either. Thanks, Becky
