Ingredients
- 1 lb. raw chicken breast, boneless, skinless, cut into bite-sized pieces
- Paper towels
- 2 Tbsp. cornstarch (preferably GMO-free) (or arrowroot)
- ½ tsp. sea salt
- ½ tsp. ground pepper
- Nonstick cooking spray
- 1 tbsp extra virgin olive oil
- 1 medium yellow onion,finely chopped
- 1 medium green bell pepper or 2 jalapenos, ribs and seeds removed & finely chopped
- 2 cloves garlic, finely chopped, grated or pressed
- ½ cup sweet thai chili sauce
- ¼ cup reduced-sodium tamari or soy sauce
- 1 tsp. toasted sesame oil
- 1 (12-oz.) bag fresh broccoli florets
- 1 cup grated carrot
- 1 tsp. sesame seeds
- Prepared brown rice or quinoa, if desired
Instructions
- Preheat air-fryer to 400° F (205 °C).
- To make popcorn chicken, pat chicken dry with paper towels.
- Add cornstarch salt and pepper to a large plastic storage bag, seal, shake to
- combine.
- Add chicken; seal bag and toss to coat.
- Place chicken in air-fryer; lightly coat with spray.
- Air-fry, shaking basket occasionally, for 12 to 14 minutes, or until golden-brown and crispy.
- While chicken cooks, heating a large nonstick skillet over medium-high heat and add olive oil
- Add onion; cook, stirring occasionally, for 4 minutes. Add peppers; cook, stirring occasionally, for 3 to 4 minutes, or until onion is translucent. Add garlic; cook, stirring occasionally, for 1 minute, or until fragrant.
- Add sweet thai chili sauce, soy sauce, and sesame oil; stir to combine.
- Add broccoli and carrots, stir to combine and cover
- Cook for 5 to 6 minutes or until the broccoli is bright green and crisp-tender
- When chicken has finished cooking, toss chicken in sauce and veggie mixture and stir to combine.
- Sprinkle with sesame seeds.
- Serve over prepared brown rice or quinoa, if desired.

Notes
Feel free to use any veggie side of your choice, like red cabbage or steamed spaghetti squash.
Not all air-fryers are made the same: If yours is a combination toaster oven, your
chicken will most likely take longer to cook (15 to 20 minutes). Monitor it closely until
the chicken is golden-brown and crispy. You can also bake the chicken for
20 to 25 minutes in a 350° F (180 °C) oven.
