Sweet and Sour Popcorn Chicken with Veggies is a healthy and easy dinner recipe that the whole family will love. It is loaded with fiber, gluten free, dairy free, loaded with protein and super yummy!

Ingredients
  • 1 lb. raw chicken breast, boneless, skinless, cut into bite-sized pieces
  • Paper towels
  • 2 Tbsp. cornstarch (preferably GMO-free) (or arrowroot)
  • ½ tsp. sea salt
  • ½ tsp. ground pepper
  • Nonstick cooking spray
  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion,finely chopped
  • 1 medium green bell pepper or 2 jalapenos, ribs and seeds removed & finely chopped
  • 2 cloves garlic, finely chopped, grated or pressed
  • ½ cup sweet thai chili sauce
  • ¼ cup reduced-sodium tamari or soy sauce
  • 1 tsp. toasted sesame oil
  • 1 (12-oz.) bag fresh broccoli florets
  • 1 cup grated carrot
  • 1 tsp. sesame seeds
  • Prepared brown rice or quinoa, if desired
Instructions
  1. Preheat air-fryer to 400° F (205 °C).
  2. To make popcorn chicken, pat chicken dry with paper towels.
  3. Add cornstarch salt and pepper to a large plastic storage bag, seal, shake to
  4. combine.
  5. Add chicken; seal bag and toss to coat.
  6. Place chicken in air-fryer; lightly coat with spray.
  7. Air-fry, shaking basket occasionally, for 12 to 14 minutes, or until golden-brown and crispy.
  8. While chicken cooks, heating a large nonstick skillet over medium-high heat and add olive oil
  9. Add onion; cook, stirring occasionally, for 4 minutes. Add peppers; cook, stirring occasionally, for 3 to 4 minutes, or until onion is translucent. Add garlic; cook, stirring occasionally, for 1 minute, or until fragrant.
  10. Add sweet thai chili sauce, soy sauce, and sesame oil; stir to combine.
  11. Add broccoli and carrots, stir to combine and cover
  12. Cook for 5 to 6 minutes or until the broccoli is bright green and crisp-tender
  13. When chicken has finished cooking, toss chicken in sauce and veggie mixture and stir to combine.
  14. Sprinkle with sesame seeds.
  15. Serve over prepared brown rice or quinoa, if desired.
  16. Enjoy!
Notes
Feel free to use any veggie side of your choice, like red cabbage or steamed spaghetti squash.
Not all air-fryers are made the same: If yours is a combination toaster oven, your
chicken will most likely take longer to cook (15 to 20 minutes). Monitor it closely until
the chicken is golden-brown and crispy. You can also bake the chicken for
20 to 25 minutes in a 350° F (180 °C) oven.
