Where are my pizza lovers out there? It is probably my biggest weakness!! I swear I could eat it for every meal, every day of the week ๐ In fact, if I was on death row and was choosing my last meal…it would be pizza!! Crazy I know for the “health coach,” but I can’t help myself…everyone has a weakness, right?
HELLO…just look at this Thai Chicken Pizza with Peanut Sauce!!!
Doesn’t that just scream heaven on a plate??? Ok, maybe it is just me…but I am in love!
And what’s not to love? Boneless, skinless chicken breasts,ย vegetables like red and yellow bell pepper, cilantro and carrots all swimming in a luscious peanut sauce and topped with melty, gooey mozzarella cheese…do I have your attention now?
Now y’all know that I cannot bake! So I don’t even attempt to try to make my own, homemade pizza dough. Instead I run by the bakery of my favorite grocery store and pick up a pound of their fresh pizza dough. Just let it rise for an hour and roll it out, pre-bake and top with all these yummy ingredients and sauce, then finish baking until golden-brown.
I blended my favorite elements from this recipe from Annie’s Eats, this recipe from Spicy Southern Kitchen and this recipe from Better Homes and Gardens to come up my version.
Here is the recipe forย Thai Chicken Pizza with Peanut Sauce:
- 1 lb. whole wheat pizza dough
- cornmeal
- 1 tbsp. extra virgin olive oil
- 1 lb. boneless, skinless chicken breast, chopped into bite-sized pieces
- 3 cloves garlic, minced or pressed
- 2 tsp. fresh ginger, grated
- ⅓ cup natural peanut butter
- ¼ cup water
- 2 tbsp. rice vinegar
- 2 tbsp. sweet Asian chili sauce
- 1 tbsp. sesame oil
- 1 tsp. crushed red pepper (more or less to taste)
- 1 red bell pepper, cut into thin strips
- 1 yellow bell pepper, cut into thin strips
- ⅓ cup shredded carrot
- ½ cup part-skim mozzarella cheese
- ⅓ cup cilantro, chopped.
- Pull the pizza dough from the refrigerator and let rise and come to room temperature at least an hour before making the pizza.
- Pre-heat the oven to 400 degrees.
- Lightly flour your prep surface with corn meal and roll out the pizza dough to ⅓ inch thick.
- Line a cookie sheet with aluminum foil and place the rolled out pizza dough on top of the foil.
- Pre-bake crust for 7 minutes.
- While the crust is pre-baking, heat the olive oil in a skillet over medium-high heat. Add chicken and cook through and no pink remains.
- Remove crust when completed and keep warm.
- Add garlic and ginger and cook and stir for 1-2 minutes.
- Add peanut butter, water, rice vinegar, chili sauce, sesame oil, crushed red pepper. Stir to combine.
- Add bell peppers and carrot, cook for 2-3 minutes or until the vegetables are crisp-tender.
- Spoon chicken, vegetable and peanut sauce mixture onto the pre-baked crust, leaving a ½ inch border.
- Sprinkle cheese over top and then cilantro.
- Bake for about 10 minutes further or until the crust is golden brown.
- Slice and enjoy!!
