Weeknight Chicken Divan with Rice found it’s way to our dinner table because I had laid out chicken for dinner and we had some broccoli in the frig that needed to be used up. I did a quick search on Pinterest for “chicken broccoli” and quickly came across this recipe for Gluten-Free Skillet Chicken Divan by Betty Crocker.
Here is your recipe for Weeknight Chicken Divan with Rice:
- I cup quick cooking brown rice
- 2 tbsp. extra virgin olive oil
- 1 large sweet yellow onion, chopped
- 3-4 cloves fresh garlic, minced or pressed
- 1 lb. boneless,skinless chicken breasts, chopped into bite-sized pieces
- 2 tbsp. dijon stone ground mustard
- ¼ cup reduced-sodium chicken broth
- 3 cups broccoli florets
- Sea salt and fresh ground pepper, to taste.
- ½ cup shredded cheddar cheese
- Cook brown rice according to package instructions, set aside and keep warm.
- Place a large skillet over medium-high heat.
- Add olive oil, onion and garlic and saute until the onion has soften and turned translucent, approximately 3-4 minutes.
- Add chicken to the skillet and brown chicken on all sides, approximately 3-4 minutes.
- Add mustard, broth, broccoli, salt and pepper. Cover. Reduce heat to a simmer and cook for approximately 10 minutes or until broccoli is crisp-tender and bright green. Turn off heat.
- Sprinkle with cheese and let stand for a few minutes to let cheese melt.
- Serve over cooked brown rice.
