This easy homemade tomato soup is quick, delicious & super simple. It is made using just a few ingredients and tastes slow simmered.
When the weather turns cooler, I start craving soups. A big bowl of soup is just the thing I need to warm me up from the inside out. During a recent cold snap, I decided that a tomato soup was just what I needed. This one turned out so good that I knew it needed a permanent place on the blog.
Easy Homemade Tomato Soup

Ingredients
- 4 tbsp. unsalted butter
- ½ large sweet yellow onion, chopped
- 1 (28 oz.) can of tomatoes (whole peeled or crushed)
- 1½ cup low sodium vegetable stock or broth
- Pink Himalayan or sea salt, to taste
- Handful of fresh basil
Instructions
- Melt butter in a large saucepan or dutch oven.
- Add onion and sauté for a couple minutes to begin to soften.
- Add the tomatoes (and their juices), vegetable stock or broth and a pinch of salt.
- Stir to combine
- Bring to simmer
- Cook, uncovered, for 40 minutes. Stir occasionally and begin to mash the tomatoes as they soften.
- Add the basil and use an immersion blender to blend until almost smooth.
- Adjust salt if needed.
- Enjoy!
