I don't think that this winter is EVER going to end!! I am over, done, finished with the cold weather. I feel so bad for my friends who don't live in the south because I know that they have it MUCH worse than we do here in southern Georgia...sorry guys :( During out last cold snap I made what I am calling my Lean Mean Slow Cookin' Chili Machine for my family and it was a HUGE hit! It is super easy to prepare on your prep day for the week and then you have a much healthier alternative to bottled salad dressing for the week :) … [Read more...]

Pesto Baked Chicken & Green Bean Risotto
Maybe I should rename this dinner the 'Green Goddess Dinner.' LOL :) The Pesto Baked Chicken features a homemade cilantro pesto & fresh mozzarella cheese. It is breeze to whip together. You've got lots of green in both dishes and you will have a lot of happy faces at your dinner table when this one is served. Spicy Red Lentil Stoup & Spread
This recipe was originally supposed to be a dip for vegetables that I was going to take to an event...However when it came together, I realized that it wasn't really "dip-like." You could certainly use it as a dip, but I loved it as a stoup! What is a stoup? Well it is thicker than a soup but not quite as thick as a stew :) Red lentils come together with wonderful spices with potent antioxidant and anti-inflammatory properties to make a belly-filling meal that is super light on calories. … [Read more...]

Tangy Marinated Grilled Chicken & Foil Packet New Potatoes with Broccoli
The secret sauce, pun intended, to this juicy, flavorful, yet healthy grilled chicken is a marinate that I cannot take credit for. My dad came up with this marinate years ago and we use it on everything from chicken to pork to steaks...and he even grilled a turkey breast for Christmas dinner this year with it and it was AMAZING!! It is a combination of soy sauce, worcestershire sauce and pineapple juice. I have blogged about it before: Marinated Grilled Chicken, Marinated Grilled Chicken, Cream Corn and Asparagus & Daddy Steak Fajitas. Let's take a look at it again with Tangy Marinated Grilled Chicken & Foil Packet New Potatoes with … [Read more...]
