Quick Lemony Skillet Pork Chops with lemon-hinted quinoa and steamed green beans This recipe is a quick, healthy and tasty weeknight meal that can be on your table in 30 minutes or less. The recipe uses ingredients that you probably have on-hand or would be a simple stop on the way home. Lemon gives both the pork chops and the quinoa a fresh pop of flavor. Quick update! I did this same recipe but with boneless skinless chicken and it was wonderful as well!! … [Read more...]

Slow Cooker Italian Flag Chicken Pasta
I hope y'all aren't getting tired of my slow cooker recipes, because here is another one: my Slow Cooker Italian Flag Chicken Pasta. They seem to be the most popular on my blog, so I thought I would keep them going. Let me know in the comments below whether you are or aren't loving all the slow cooker recipes. They just seem to work with my lifestyle. I've mentioned before that I work from 10-6ish pm at my day job, so it is very convenient for me to throw a slow cooker meal on in the morning before I leave the house. … [Read more...]

Spring Risotto with Fresh Asparagus and Edamame
Spring has finally sprung after a LONG, VERY LONG, LONG winter! Even for us in the south, we had a lot of cold weather, which makes this girl not too happy :( I love the warm weather and sunshine...I really feel for those of you who live up north! Months and months of cold, dark, dreary and miserable weather...I don't know how you do it! To celebrate Spring's arrival, I put together a Spring Risotto with Fresh Asparagus and Edamame. … [Read more...]

Asian Ground Beef Skillet
Asian Ground Beef Skillet is a departure from my typical slow cooker weeknight meals. Oh, and in case you were wondering why I do so many slow cooker meals on Becky's Best Bites, it is because of a few things. Number 1 is that I love how simple it is to throw ingredients into your slow cooker in the morning and come home to a dinner that is done! Not to mention that the house smells fabulous :) Number 2 is that my job has odd working hours. It isn't the typical 9 to 5 or 8 to 5 that typical professionals work. See I work at a community art center and we are open from 10 to 6pm. So my work hours are 9:45 am to 6:15 pm. Then I have a 20 minute … [Read more...]

Skinny Shrimp Scampi Pasta With a Kick
Skinny Shrimp Scampi Pasta With a Kick Is a combination of two dishes that I have made several times. My Skinny Cajun Chicken Pasta and a shrimp scampi. I have put together lighter versions of these family favorites and my family really enjoyed them. And when I asked my dad what he would like for his birthday night supper, he said that he was torn between these two dishes, but he wanted to go with shrimp. So I thought I might try to combine the dishes. … [Read more...]

Homemade Baby Food: Banana and Sweet Potato
Usually I share recipes that are geared for the big kiddos , but today I am going to do one for the lil kiddos (but it is really for the moms too...but don't tell those precious babies). I have recently learned to prepare homemade baby food for my nephew. I made a promise to my sister when she was pregnant that I was going to try to supply all the baby food that he would need with my homemade, organic baby food. So far, I am doing a good job of making large quantities, freezing and getting the food to her despite the over 3 hours in a car that separates us. … [Read more...]

Slow Cooker Chicken Parmesan Quinoa Toss
Slow Cooker Chicken Parmesan Quinoa Toss gives you all the flavors of the Italian favorite but none of the guilt. Quick, easy, zesty, healthy and so tasty. The inspiration for this recipe came from one of those recipe cards that you see at the grocery store. The original recipe called for pasta and it was a skillet dinner. I thought, "hmm...I love the flavor combinations but I can make this healthier..." … [Read more...]

Slow Cooker Thai Curry Pork
This recipe for Slow Cooker Thai Curry Pork came together as a lot of my recipes do, from looking in the pantry/refrigerator and thinking, "what can I put together for dinner tonight?" I'm a big fan of using the food that we already have to put something together and not having to run to the store all the time just to put dinner on table. I was craving thai food and all the wonderful flavors that I associate with it...turmeric, hot curry, coriander, fresh ginger and garlic...mmm, ok now I am getting hungry again... … [Read more...]

Chicken Marsala Pasta
Chicken Marsala Pasta is one of my favorite dishes. I decided to serve it for my boyfriend's birthday. He loves mushrooms and I realized that I had never made this one for him, so I put it on the menu. Typical Chicken Marsala Pasta is made with lots of butter and heavy cream. Of course, I couldn't make it that way. Heavy cream and lots of butter just wouldn't be Becky's Best Bites approved. … [Read more...]
