So…I had every intention of getting this recipe up and out there for y’all before the Big Game, the Super Bowl, but that didn’t happen…sorry 🙂 I guess I can blame it on being 37 weeks pregnant and I am going to 😉 I figured I might as well go ahead and post it afterwards so that we would have it for our next game day! These Slow Cooker Buffalo Chicken Nachos were so easy and such a hit for our Super Bowl “game day”! I say that jokingly because our game day involved watching the first half of the game over to my parent’s house and then heading home to watch Lady Gaga’s halftime show and the rest of the game on the couch! Wow!! We are partiers 😉
I decided that I had a craving for buffalo chicken nachos and knew that I wanted to use the slow cooker because I am all things lazy these days (hello pregnancy)!! I ended up with a mash up of a few of recipes to come up with my version. I started with my Slow Cooker Buffalo Ranch Chicken Sliders, which are always a hit and then I found this recipe from Host the Toast for their Loaded Buffalo Chicken Nachos and this recipe for A Family Feast Slow Cooker Pulled Buffalo Chicken to get started.
Both of those recipes involved ranch, but I was really in the mood for blue cheese to go with my Slow Cooker Buffalo Chicken Nachos so I decided to make a blue cheese dipping sauce and when I found this recipe from Cupcakes and Kale Chips for their Greek Yogurt Blue Cheese Dip, I knew I had to try it!! I loved the idea of using one of my healthy staples, greek yogurt!!
I also decided to do a Quick Guacamole on the side to go with my Slow Cooker Buffalo Chicken Nachos because I love all things avocado and the good fats are perfect for baby girl and I during this final stretch of pregnancy (and I felt better about balancing out all of this cheese!!!!
Here is your recipe for Slow Cooker Buffalo Chicken Nachos with Greek Yogurt Blue Cheese Dip & Quick Guacamole:
- 1 large, sweet yellow onion sliced
- 3 - 4 cloves garlic, minced or pressed
- 1.5 lbs. boneless, skinless chicken breasts
- ½ stick unsalted butter, melted
- 1 cup buffalo wing sauce (I used Frank's Red Hot)
- 1 tbsp. cumin
- 1 tbsp. chili powder
- 1 cup plain greek yogurt
- 1 tbsp. white balsamic vinegar (more if you would like a thinner sauce or salad dressing)
- 1 tsp. extra virgin olive oil (more if you would like a thinner sauce or salad dressing)
- pinch of dry mustard
- pinch of cayenne pepper
- 1 small container (approximately 5 oz.) blue cheese crumbles
- sea salt and fresh ground pepper, to taste
- 3 medium avocados
- 1 lime, juiced
- 2 tbsp. cilantro, chopped
- Sea salt and fresh ground pepper, to taste
- 1 family or party size bag (approximately 14.5 oz.) of your favorite tortilla chips (I used Tostitos Scoops)
- 1 bag (8 oz.) mexican style shredded cheese
- 2 tbsp. cilantro, chopped
- Place a slow cooker liner in the bowl of a slow cooker or spray generously with nonstick cooking spray.
- Add sliced onions and garlic to the bottom of the bowl and top with chicken.
- In a small microwave safe bowl, melt butter.
- Add buffalo sauce, cumin and chili powder and stir to combine.
- Pour sauce over chicken, cover and cook on high for 4 hours.
- To prepare the Greek Yogurt Blue Cheese Dip, combine greek yogurt, white balsamic vinegar, olive oil, dry mustard and cayenne pepper in a small mix bowl.
- Gently fold in blue cheese crumbles and season with salt and pepper.
- Refrigerate until needed for serving.
- To prepare the Quick Guacamole, peel and mash avocados in a small mixing bowl. Add lime juice, cilantro, salt and pepper. (Feel free to add tomatoes and onion, if desired) Stir to combine.
- Refrigerate until needed for serving.
- To assemble the nachos, preheat oven to 400 degrees F.
- LIne a large, rimmed baking sheet with aluminum foil for easy cleanup.
- Pour half of the bag of tortilla chips on the baking sheet. Spread out the chips evenly.
- Add half of the cooked buffalo chicken and top with half of the mexican cheese.
- Layer the other half of the tortilla chips, buffalo chicken and cheese.
- Bake the nachos for approximately 5 minutes or until the cheese is melty and bubbly and just beginning to brown.
- Remove from oven and garnish with cilantro.
- Serve with Greek Yogurt Blue Cheese Dip & Quick Guacamole.
- Enjoy!!
